Yuzu is a citrus unlike any other—floral, complex, with notes of grapefruit, bergamot, lime, and sweet orange. It's a hybrid of an ancient lime, called Ichang Papeda and a sour mandarin orange. Native to China, yuzu is now rare there, with only a few farms still growing it.
This Yuzu and Gold Guanyin black tea from cultivate is scented with both green and ripe Chinese yuzu through a meticulous, slow process. In early September, green yuzu is hand-peeled, and the rinds are layered with semi-wild Guanyin tea from Longquan on wide bamboo trays. After resting in open air for 12 hours, the trays are gently baked to infuse the tea with the citrus oils. The process is repeated again in late October with ripe, orange yuzu. Finally, the tea is blended with finely crushed dried peels of both green and ripe fruit. The result is a radiant, perfumed tea.
